
Today, I am making some steamed banana cake wrapped in banana leaves. Traditionally it is called Lepat Pisang in Malay language. More of a snack and morning breakfast food. Often seen in countries like Malaysia and Singapore.
There are variations using different ingredients with wrapping of banana leaves as parcels.
Mash sweet potato or mash tapioca can be used as a substitute for this recipe.
Recipe includes mash bananas, flour, sugar and shredded coconut.
Mash 200g bananas and add in 80g sugar and 50g shredded coconut. Mix to combine till sugar almost dissolves.
Finally sift in 80g plain flour to the mixture. At this point the batter should look thick and sticky.
Prepare a 20mm by 20mm banana leaf and few small slices of bananas.
Place a small amount of batter onto the centre of the banana leaf and a few pieces of the sliced bananas on the top.
Wrap the banana leaf by folding the top layers and tucking at both ends.
Steam in a steaming pot for 15 min until a toothpick inserted comes out clean.
