I read this cookbook and was amazed to find the street hawker food recipes simple and adequate to serve as home cook food. I would recommend this Mee Rebus recipe as my family gave the thumbs up!.
It is a noodle dish popular in Malaysia,Indonesia and Singagpore. It is made up of yellow noodle and slightly spicy but thick sweet potato base gravy. It mainly comes with bean sprouts,boiled eggs, firm tofu and some green chilli. Enjoy la!
Serves 10
Ingredients
Yellow noodles, Bean sprouts, Hard boiled egg, diced Deep fried beancurd, chopped spring onion Celery, Deep fried sliced shallot, sliced Green chilli.
Sauce
- 2 litres water
- 400g cooked mashed sweet potato
- 80g chopped Dried shrimps
- 100g chopped Shallot
- 100g chopped Garlic
- 30g chopped tumeric
- 20g chopped Galangal
- 2 stalks Lemongrass(chopped)
- 4 tbsp Ground bean paste
- 2 tbsp Roasted peanuts(crushed)
Seasoning
- 1 1/2 tsp salt
- 4 tbsp Sugar
- 1 tsp Dark soy sauce
Thickening
- 3 tbsp plain flour, 4 tbsp water (mix well)
Method
- Heat some oil. Fry dried shrimps, shallot, garlic, tumeric, Galangal, lemongrass and bean paste till fragrant. Add water and bring to the boil. Add mashed sweet potato.
- Put in crushed roasted peanuts. Add in seasoning. Stir in the thickening glaze. This is the sauce.
- Cook the noodles and bean sprouts in water. Drain. Put into a bowl. Pour in some sauce from step (2) and top with egg, beancurd, shallots, spring onion, celery and green chilli. Serve. Voila!
