Today, one of my family members prefer something more appetizing than the usual daily meal so I put on my thinking cap and thought of cooking a soup dish with vinegar and spicy taste. Common ingredients are tofu, mushroom, pepper, cornflour, vinegar and some shredded meat.
Serves 4
Ingredients
- 4-6 dried chinese mushrooms(shitake) soaked, I use can mushrooms
- 115g pork or chicken
- 1 tofu
- 50g sliced bamboo shoots, drained, I use shredded carrots for color(optional)
- 600ml chicken stock
- 1 tbsp chinese rice wine
- 1 tbsp light soy sauce
- 1 1/2 tbsp rice vinegar
- salt to taste
- 1/2 tsp ground white pepper
- 1 tbsp cornflour mixed with 2 tbsp water till dissolves
Method
- Squeeze the soaked mushrooms dry, then discard the hard stalks.
- Thinly shred the mushrooms, meat, tofu and bamboo shoots.
- In a wok or saucepan, bring the stock to rolling boil and add the shredded ingredients. Bring back to boil and simmer for 1 minute.
- Add seasonings and bring back to the boil once more. Now add the cornflour and stir until thickened. It also depends how thick the sauce you prefer so less cornflour do the trick. Serve hot. Voila!
