A different kind of cupcakes I suppose…Ingredients used is so simple and yet delicious.
I am so delighted by this author Coco Kong for all her wonderful Cupcakes recipes.
She uses very simple methods and ingredients creating unique and different flavors Cupcakes as well. Again, it is about texture and flavor.
The ones I baked was Pineapple Cupcakes.
Makes 6 pieces
A
- 11og butter
- 85 icing sugar
- 2 eggs grade B(beaten)
- 3 spoons pineapple liquid
- (spoon out from canned pineapple)
B
- 145g self raising flour
- 50g canned pineapple( diced )
C
- Some canned pineapple pieces( diced )
Material needed
- 6 pcs paper cups (7.6cm X 3.3cm)
Method
- Beat butter and sugar of ingredient A until smooth. Add eggs in slowly followed by pineapple liquid, beat well.
- Fold in flour of ingredient B, mix it until even.
- Add in diced pineapple. Spoon into paper cups 3 quarters of the way up. Topped surface with ingredient C. Arrange on a baking tray.
- Bake no. 2 in a preheated oven at 150’C for 15-20 minutes. Cool cakes. Voila!
