Today I cooked some Indian food and yum, my family loves it. Kinda spicy and thick gravy chicken curry related to Kashmir from one of my recipe books. Ya, it is a long list of recipe but believe me folks, it is worth cooking this dish with fresh ingredients as it truly turns out the kind of curry I expected and qualified as a true Indian curry. Awesome!
Serves 4
Ingredients A
- 10 pcs chicken( thigh with bones or whole chicken cut into pieces )
- 60g garlic
- 2 tbsp fried shallots
- 150g shallots
- 50g mint leaves
- 250ml natural yogurt
- 120g meat curry powder( mixed with water )
- 5 green chilli
- 300g tomatoes
- 30g coriander
- 1 tbsp tomato paste
Ingredients B
- 5 cardamons
- 3 cloves
- 1 inch cinnamon stick
Marinade
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp tumeric powder
Seasoning
- salt to taste
Method
- Cut shallots and garlic into slices. Blend green chilli, tomatoes, coriander and tomato paste.
- Rinse chicken, add in Marinade and set aside.
- Pour in 1/2 cup oil, fry the shallots and garlic slices until golden brown, add in ingredients B and meat curry powder mixed with water, then stir-fry until fragrant.
- Add in blended ingredients and fry till it becomes thick, add in chicken, cover the pot and simmer until cooked.
- Add in yogurt and Seasoning, serve with a sprinkling of fried shallots and mint leaves. Voila!
You can substitute natural yogurt with coconut milk.
