My Bubble ‘N’ Squeak

Last Friday I had a chat with Kay about some English delicacies. Kay spoke about this ‘English thing’ called bubble and squeak.

I have never heard this dish before and it serves as kinda one dish meal with leftovers of roast dinner. Its ingredients mainly are potato and cabbage. I have added kale, carrots and rashers as I can’t wait to try this recipe straight away. Can serve as a quick breakfast. Thanks Kay!

Ingredients (serves 2)

  • 1 tbsp butter
  • 3 rashers, chopped or sliced thinly
  • 1 garlic chopped
  • handful of chopped kale
  • 1/2 shredded carrots
  • 5 small potato(poached/mashed slightly or leftover roast potato/mashed)

Method

  1. Melt butter in a hot non stick round pan, add in the bacon and saute gently until it turns almost brown.
  2. Add in the garlic and onion and gently stir together with the bacon.
  3. When onion turns soft, add in kale, fry gently till soften and add in carrot. Fry all the ingredients together till combine.
  4. Next add in the potato mash. Combine all the ingredients and flatten gently as to push them onto all the sides like a pancake form.
  5. Let the pancake brown lightly before turning over to the other side. Turn over onto a plate, slice into wedges. Serve. Voila!

    Hey Jenny its Kai =)
    Another way it can be done which is the way most english people do it is the mash potato, then left over vegies such as carrots, peas, broccoli, cauliflower etc. Mash it all together, put some oil in the pan and just fry it =)
    Most people wont put in meat as they use it in an english breakfast, so there will be sausages and bacon already
    Thats how my family makes it anyway, and a lot of other families i know do it this way as well =)
