I like to wish everyone here A Happy New Year. Here s a recipe I would like to recommend you to try as it turns out yummy and you won’t disappoint your guests when you prepare them. Often you would have tried the Asian satay like those from Malaysia and Singapore. This is the Thai style and my family really enjoys it. You can use pork, chicken, beef and lamb.
Ingredients
- 500gm chicken meat( I use chicken thigh sliced 2cm and 1/2 cm thick ) Your preference on the meat bite size.
- Some bamboo satay skewers( soaked in water for about 1/2 an hr )
For Marinade( mixed together)
- 1 garlic clove( pounded )
- 2 tbsp castor sugar
- 1 tbsp meat curry powder
- 1/2 tsp tumeric powder
- 1-2 tbsp fish sauce
- 1-2 tbsp cooking oil
Satay Sauce
- 180ml concentrated coconut milk
- 360ml water
- 3 tbsp chilli boh( chilli paste)
- 30ml fish sauce
- 4 tbsp white sugar
- 240g roasted peanuts(chopped coarsely)
Method
- Cook satay sauce ingredients together in a small pot leaving the peanuts. When the sauce has fused together and taste adjusted, turn off heat. Stir in peanuts.
- Mix in the chicken with the marinade for an hour or more. Thread marinated chicken onto the skewers. Add in some onion in between the meat if you wish. Grill them till cooked through. Serve with the satay sauce, accompanied with onions, cucumbers and rice cakes(optional). Voila!
