I would say this is an Asian created cupcake recipe. Usually chicken meat floss is used in savoury buns popular amongst the Asians. Now chicken floss is also found in a cupcake or muffin recipe. I would like to share this recipe with you for it s simple and quick to prepare, yummy too! Serves as a snack.
Ingredients
A
- 120g butter
- 80g icing sugar
- 2 eggs (beaten)
- 60g mayonnaise
B
- 140g self-raising flour
- 1 tsp baking powder
C
- 30g chicken meat floss
For decoration
- Some mayonaise
- Some chicken floss
Method
- Beat butter and sugar of ingredient A until smooth. Add eggs in a slow stream. Add in mayonaise, beat well.
- Add in ingredient B, mix well. Then add in ingredient C, spoon into paper cups 3/4 of the way up. Arrange on a baking tray.
- Bake no. 2 in preheated oven at 150’C for 15-20 minutes. Once removed, decorate the top with mayonaise and chicken floss. Voila! Happy Days!.

Great idea! This recipe gives me another new inspiration – cupcakes with bonito flakes, mayo and okonomiyaki sauce! Gotta start baking some soon 🙂
